DAOU Vineyards farms DAOU Mountain in the Adelaida District of Paso Robles, the former Hoffman Mountain Ranch property once developed with consulting enologist André Tchelistcheff. Brothers Georges and Daniel Daou — Lebanese-born, French-raised, and Southern California-trained engineers before they were vintners — bought the mountain for what the site calls a rare calcareous-clay soil, the same soil type found in Saint-Émilion and Bordeaux's right bank, suited to Cabernet Sauvignon and other Bordeaux varieties.
Daniel Daou serves as founder and chief winemaker. The portfolio is built in tiers around that Cabernet focus: entry-level DAOU and Discovery bottlings, Estate and Estate Collection wines from the mountain (including the flagship proprietary blend Soul of a Lion), and the top Patrimony tier, alongside Chardonnay, Sauvignon Blanc, and Rosé bottlings and blends such as Pessimist and Mayote.
