Assyrtiko is a Greek variety, native to the volcanic soils of Santorini. It is brand new to California's record, first appearing in atlas data in 2024, and no bearing acreage has yet been reported to CDFA; it shows up so far in 9 crush districts over two crop years. It is a high-acid white built to retain freshness in hot, dry conditions. In California it remains an experimental planting, too new and too small to register in acreage statistics.
